Egg mayonnaise sandwich
A Kubbord recipe
Steps written by Kubbord
What goes in
- 2bread
- 2eggs
- 2mayonnaise
- scallion (optional)
How to cook it
- Place the 2 eggs into a small saucepan and add enough tap water to cover them completely. Set the pan over medium-high heat and bring the water to a rolling boil.
- Reduce the heat to medium to maintain a steady simmer, and cook the eggs for 8 minutes until fully set and the centers reach an internal temperature of 160°F (71°C).
- Drain the hot water and run cold tap water over the eggs for about 2 minutes until they are cool to the touch, then peel away the shells.
- Finely slice the scallion. In a bowl, mash the peeled eggs together with the mayonnaise and sliced scallion using a fork until evenly blended.
- Spread the egg mixture thickly across one slice of bread, then place the second slice of bread on top to close the sandwich.
