What goes in
- 2½ lbboneless skinless chicken
- 1.2 mlsalt
- 0.6 mlblack pepper
- 1 cancanned pineapple chunks or crushed

How to cook it
- Place a large skillet over medium heat, then arrange the chicken in a single layer in the pan.
- Season the chicken evenly with the salt and black pepper.
- Cook uncovered for 8 to 10 minutes, turning once, until the chicken begins to lightly brown on both sides.
- Pour the canned pineapple and the water into the skillet, stirring to scrape up any browned bits from the bottom.
- Cover the skillet with a tight-fitting lid, reduce the heat to medium-low, and simmer for 12 to 15 minutes until the chicken is tender and registers an internal temperature of 165°F (74°C).
- Remove the skillet from the heat and transfer the chicken and pineapple sauce onto plates to serve.
