1. Combine the orange juice, white wine vinegar, finely chopped onion, salt, black pepper, vegetable oil, and Dijon mustard in a tightly lidded jar and shake vigorously, or whisk them together in a small bowl.
2. Place the torn greens, turkey breast, mandarin orange segments, celery, and any extra vegetables into a large serving bowl and toss gently.
3. Serve the prepared salad dressed with the orange vinaigrette or pass the dressing on the side.
