How to cook it

  1. Preheat your oven to 425 °F.
  2. Wash and scrub the potatoes, then chop them into 1-inch pieces.
  3. In a large mixing bowl, combine the potatoes with the bell pepper, green beans, tomato, onion, garlic, cumin, salt, and 1 tablespoon of olive oil.
  4. Spread the vegetable mixture into a 2-quart baking dish and roast in the oven for 30 to 40 minutes until tender.
  5. After the vegetables have been roasting for 15 minutes, prepare the fish packets.
  6. Brush the tilapia fillets with the remaining olive oil and coat them evenly with the Caribbean seasoning.
  7. Place each fillet in the center of a square of aluminum foil.
  8. Quarter and core the pears, slice them into thin wedges, and arrange them on top of the fish.
  9. Fold the foil over the fish and fruit, pinching the edges tightly to seal the packets.
  10. Place the packets on a baking sheet and bake for 20 minutes, or until the fish reaches an internal temperature of 145 °F and the fruit is soft.
  11. Carefully open the packets and serve the fish and fruit alongside the roasted vegetables.
