What goes in

How to cook it

  1. Thoroughly wash the mustard greens, strip away and discard the tough stems, and tear or slice the leaves into bite-sized pieces.
  2. In a large saucepan, combine the water, smoked turkey breast, fresh hot pepper, cayenne pepper, ground cloves, garlic, thyme, scallion, ground ginger, and onion.
  3. Place the saucepan over medium-high heat and bring the liquid to a rolling boil, cooking for 5 to 7 minutes until fragrant and the turkey breast reaches an internal temperature of 165°F (74°C).
  4. Add the prepared mustard greens to the boiling turkey broth, pressing and stirring them down into the liquid as they begin to wilt.
  5. Reduce the heat to medium-low, cover with a lid, and simmer for 20 to 30 minutes until the greens are completely tender and darkened.
  6. Remove the saucepan from the heat and serve the smothered greens warm with the braising broth and turkey.
