What goes in

Preheat the oven to 200°C (400°F).
Cut the potatoes, onions, and pepper into bite-sized pieces of similar size, and slice the sausages into evenly sized pieces.
Spread the cut potatoes, onions, pepper, and sausages in an even, single layer across a 33x45 cm (13x18-inch) rimmed baking sheet so they do not crowd the pan.
Roast in the oven for 20 minutes.
Turn the sausages and vegetables over, then return to the oven to roast for another 20 minutes until the potatoes are tender when pierced with a fork, the vegetables are golden brown, and the sausages reach a safe internal temperature of 160°F (71°C).
Divide the roasted sausages and vegetables among plates and serve.
