What goes in

How to cook it

  1. Rinse the collard greens thoroughly under cool tap water, then trim off and discard the tough central stems.
  2. Place the collard leaves in a large pot and pour in approximately 1 inch (2½ cm) of tap water.
  3. Cover the pot with a tight-fitting lid and place it over high heat until the water comes to a rolling boil, about 3 to 4 minutes.
  4. Lower the heat to medium-low to maintain a gentle simmer and steam the covered greens for 3 to 5 minutes, until tender and vibrant dark green.
  5. Carefully remove the lid, drain away any excess water, and toss with salt and pepper to taste before serving.
