How to cook it

  1. Divide the 1 lb haddock or cod fillets into four equal portions.
  2. If using the stovetop method, place a 10-inch (25 cm) skillet over medium heat to preheat for 2 minutes, then arrange the fish portions in the pan.
  3. Season the fish immediately by spooning the 1 tablespoon lemon juice over the top and sprinkling with the ⅛ teaspoon dried dill weed, ⅛ teaspoon salt, and black pepper.
  4. Cover the skillet and cook over medium heat for about 5 minutes, until the fish turns opaque, flakes easily with a fork, and reaches an internal temperature of 145°F (63°C).
  5. If using the microwave method, arrange the fish portions in a single layer in an 8x8-inch (20x20 cm) glass baking dish and cover with wax paper.
  6. Microwave on medium power for 3 minutes.
  7. Carefully remove the wax paper, flip the fillets, and season them evenly with the 1 tablespoon lemon juice, ⅛ teaspoon dried dill weed, ⅛ teaspoon salt, and black pepper.
  8. Cover the dish again with the wax paper and microwave on medium power for 3 minutes, until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
